What is the Best Recipe for Cooking Crawfish?

I know you guys can cook some crawfish. What is your best recipe for the boil?    mossyisland

 

 

Per 35-40 lb sack:
(1) 4.5 lb jar Zatarain’s Crawfish/Shrimp/Crab Boil (dry)
(2) Zatarain’s Seafood Boil Bags
8 oz. Liquid Crap Boil
(1) box salt
(10) onions – halved
(6) lemons – halved and squeezed
(10-20) Red potatoes
(1) stick of butter
(3) lbs. sausage
(20-24) ears corn cobbettes
(1) pineapple cut up into rings (don’t knock it if you haven’t tried it)

Get water boiling, add all seasonings, butter, and veggies (minus corn) and stir. Once rolling boil, let boil for 25 mins. Add crawfish and sausage and stir. Once rolling boil, boil 5 minutes and turn off fire. Add corn and pineapple rings. Let soak for 20-30 minutes and spray the outside of the pot to cool down so crawfish doesn’t keep cooking. Some people add ice, I just spray the outside of the pot. Sample crawfish after 20 minutes and check for tastiness. Depending on desired flavor, either take out or let soak longer.   bucks-n-beaks
