I took archery in the fall semester. Was dialed in like a laser by bow season, and met some guys that I still hunt with. About half of the class were rednecks wanting to shoot their hunting bows and the other class were girls. And, I learned a few things about form while I was at it.

Took an Art Appreciation class once to finish out a humanities requirement. Ended up with a wife out of the deal so I'm not sure it worked out like I thought. I'd check with folks who have a major in the college where the class is you are thinking about. Profs at USM business college were bad about swapping schedules because they knew who was thought to have the easy class. It was a real kick in the booty to show up and the class is being taught by the person you were trying to avoid. I had to take business law like that once with a frustrated lawyer who I think was on probation from the bar because he had been spending to much time in a bar. He took out his frustrations on a bunch of poor undergrads.

My ex girlfriend from years gone by once took a Human Sexuality class at the University of Arkansas. It consisted of mostly watching porn. I doubt State has that class but it would be worth looking into.

My wife was a nursing major at USM and had to take "Marriage and Family" The class was taught by a liberal masculine dyke. I'd meet my wife at the end of that class every Monday, Wednesday, and Friday for lunch and she'd come out with steam coming out of her ears. Talk about a screwed up class.

I just graduated from MSU in May. I took Interviewing (CO 3833) and it was the easiest class I have ever taken.
A couple of others could be: Principles of Marketing (MKT 3013) or Organizational Communications (MGT 3213).
I took them all online and were all very easy classes.

Ag Mechanics, they teach mainly welding and electrical... It was an easy A and entertaining. His only rule in the class was no dip spit on the shop floor

I took racket ball. A cheerleader taught the class. Best class ever.

Strength and conditioning. Had to get up early but I actually got in the best shape I've ever been in. Coach Akers taught it but I think he's retired now. Had Tang Hamilton and Dontae Walker in my class, easy A for sure...

+1 on the freshman geography...easy A.
Another geography class that was pretty easy and actually gives you some practical usable knowledge is Maps & Remote Sensing, used to be taught by a pretty cool guy named Taylor Mack.
If you're leaning toward business courses see if Mike Goree is still teaching....I hated almost all of my classes in McCool except his.....actually enjoyed them. He teaches marketing courses.
