What kinda recipe you fellas got for gumbo. How do you do the rice and roux?

I boil the rice and make about a six beer roux between medium and medium low heat.....sometimes it's a four beer roux.....it depends on how fast i'm drinking beer at the time. My mom makes a two beer roux on the same heat with the same results.
