Postby eSJay » Wed Sep 03, 2008 7:39 pm

Anyone have a good one?
Would like to try something different from the ole grilled bacon wrap.

duv kabob with pineapple and jalepeno

(duv breast filets + jalepeno + pineapple chunk) with bacon laced in between

for best results soak filets overnight in pineapple juice and red wine vinegar cumin powder and red pepper flakes

works equally well with duck breast and a little cream cheese bw the meat and pepper churches it up a bit too

biggest tip is to cook over low coals

cut the meat off each side of the bone and fry it like duck or grill it. I have also made some good jamalaya using the fillet dove
