marinate duck breast in your favorite sauce over nite... wrap in celaphane and beat the crap out of it with a fruit jar.... noy only does it force the marinade into the meat, but it flattens it out for even cooking and only takes a few minutes on the grill. i tried it on my last pkg of duck and only wish now i had made a few more of the easy shots last winter.... {i'm really hooked on the teriaki and honey}
