Duck dressing

Anyone have a recipe for Duck dressing. I have never made any and wanted to try it. :?:

4 quarts of crumbled corn bread
1 quart +/- broth off boiled ducks
2 cups finely chopped onion
1 cup finely chopped celery

Boil 2 whole big ducks with 2 onions (quartered) and 4 stalks of celery, liberal salt and pepper and 1/4 cup worchestershire sauce. When done remove ducks, cool, and de-bone. Reserve broth to mix with ingredients above. Season liberally with salt, black pepper, and sage if desired.

My family eats dressing "raw", but most people will mix the deboned duck meat in the dressing and bake it at 350 for 30-45 minutes.

Someone gave you some ducks...or did you buy 'em??

I like to add a little chopped bell pepper in with the onions and celery.

also try adding some cream of mushroom to the mix...seems like it makes for a more moist dressing when baked in

I bought them from some wino in the quarters in New Orleans. They were white ducks. What kind do you think they are? :?:
