My wife cooked it tonight. She cut slits in it put onions and bell peppers in the slits and put it in Italian Dressing and put it in the oven for about 2 1/2 hours. It came out real tender and good. I appreciate all the advise, I still have the other hind quarter and a front shoulder to play with when I have more time.
