Need help on Piroge

I have been reading the post about the piroges some of you have built. I am interested in building on the fish and hunt backwater out of. I just have a few questions.

How stable are they?
How hard are they to make?
Does alot of people use them for the purposes I want and how do they like them?

Any help would be greatly appreciated.

Why not just go buy one for $350 dollars. I'm planning on buying something this year. In fact, there is a place I found in LA that is right on the way to Grand Isle, LA. I know I'll be fishing there in a couple of months. I'm going to go look at them while I'm there and probably bring one home. I'm not technically minded enough to build something, nor am I patient enough to start such a project.
