Re: corn bread
Yellow corn meal, buttermilk, tablespoon of veg oil, and/or butter, dash of salt, dash of sugar, 1 or two eggs.
Coat a cast iron skillet with veg oil and set it on the stove over med heat. Mix up ingredients until the batter is a pourable consistency. Once the skillet is SCREAMING hot, pour in the batter. Put it in the oven at 400-425 degrees for about 18 mins.

Re: corn bread
Dont over think cornbread....
1 cup corn meal, two eggs, and milk
stir up corn meal and eggs, add milk until it pours but not runny.
take a cast iron skillet with enough oil to basically cover the bottom (vegetable, peanut) and heat the oven to 400, when the oven reaches temperature the skillet is ready. add cornmeal mix and cook for about 20 min until top is good and golden brown (I like the bottom to have a good crust)
to add a nice twist, add some cracklins to the mix, not the ones like in the gas station, get the ones in the meat section at the grocery store..... I love cracklin cornbread
This is the way Memaw made it and Mama makes it and I make it so its made it three generations atleast unchanged haha

Re: corn bread
Agree on the don't over think part but a good skillet the right heat and oil are key. I actually use the old crisco white grease - best I've found. Melt a little and put in the batter as well as the pan.

Not all cornbreads are created equal. Not even close.

I like this kind of grease too, but my other half has banned it from the house.the doctor wrote:Agree on the don't over think part but a good skillet the right heat and oil are key. I actually use the old crisco white grease - best I've found. Melt a little and put in the batter as well as the pan.
