Speckle Trout

Need some help guys. Myself and 2 buddies went Trout & Redfishing last Saturday and tore the trout up, so now I need some ideas on how to cook them. I have never cooked or eatin' Trout, but everyone here says they are good. Any and All suggestions are appreciated.

And eat as much as you can fresh. I know some people will say they can't tell the difference if frozen and thawed correctly, but to me there is no comparison. Better to have a bunch of friends over and eat it fresh than to freeze it and make it last. JMHO

what he said. i prefer it fresh but fishy tasting and smelling. as far as treating like catfish, i dont keep, clean or eat catfish except fresh.

I say like catfish cause I figured you MS folks can relate to it. All I know is saltwater fish down in my parts.

Blackened some last night. Turned out very good, even better than fried, which is how I normally cook it.

I try and eat speckled trout as quickly as possible. Ill fry a batch first night. Second night, dust with flour, season ith salt ,pepper, whatever, and sear in skillet with olive oil and butter. While pan frying trout, saute green onions in beef consume. Serve pan seared trout on grits, then douse with consume.

I'm not sure why all of yall think trout doesn't freeze well. I have caught ate and frozen many of speckled trout in my life. They freeze fine. Fresh fish is always best but hell you cent eat it all at one setting. Now white trout tend to get a little mushy when frozen but specks freeze.

Somebody needs to show me how then. I've frozen in water, dry, and vacuum seal. Three months later, it all has a little fishy taste to it. It's eadible, don't get me wrong, but it no comparison to that fresh saltwater fish taste.

Besides, it's just an excuse to head south and get some more fish! 8)

Specks are VERY versatile in the kitchen...grill it....smoke it....fry it....bake it.... broil it....just DONT over cook it. Mold a boat outta tinfoil, add a little butter, salt pepper and garlic...broil or grill for a coupla minutes on each side or sautee nuggets with vegatable and herbs and serve over noodles...DAMN...Im hungry and headed to Ocean Springs this evening with the boat. And YES, you can freeze em...no worries. White trout will get a little mushy :wink:

Agreed. I just finished up my last batch from a trip last august and they tasted fine to me. Now, nothing is going to taste like fresh, after its been froze, but it doesnt taste bad. Agreed on the white trout comment as well.

Anyway, like I was sayin', trout is the fruit of the sea. You can barbecue it, boil it, broil it, bake it, saute it. Dey's uh, trout-kabobs, trout creole, trout gumbo. Pan fried, deep fried, stir-fried. There's pineapple trout, lemon trout, coconut trout, pepper trout, trout soup, trout stew, trout salad, trout and potatoes, trout burger, trout sandwich. That- that's about it.

i freeze thousands of pounds of trout a year for personal and family/friends consumption. No issues. Take off every last small piece of skin and the rib cages and they won't be fishy.
