Mine are all facing basically east so to get a good shot of all the heads I would also be facing WNW

interesting about fixed mature flowers vs young buds and leaves somewhat following, but i guess it takes a pretty stiff neck to support those big heads full of seeds!

Before flowering they follow the sun. After flowering the heads almost always face east.
