I've always wanted to try tripletail but never have come across any.

my #1 favorite fish to eat out of the Gulf is a grouper - it hard to beat a fresh grouper steak - never frozen
#2 would be a fresh spanish mackerel - and never frozen - bring it wright off the boat and clean it and cook it, that is the only way to do it.
