Gotcha. Spent my highschool years sacking groceries and saw tripe thousands of times. Never heard it called melt.

I never heard it called tripe, must be a north of I-10 thing. We call it melt, and its the stomach lining of a cow. Our butcher will just give it to us.

Beef Tripe is the lining of the stomach, usually from one of the first three chambers of the stomach.

Beef Melt is the pancreas.


Beef Melt is some of the best crab bait you can use. :) I've lost track how many times I've been crabbing at a weir next to someone who had turkey necks and didn't catch near the amount of crabs as I with melt.

On a side note: Beef Tripe is pretty good table fare. I've never seen anyone saute some beef melt though. Maybe with enough onions it might taste decent or maybe fry it like most everything else in south LA.

Tripe is tripe. Melts is what we got for the crayfish nets when I was a kid! When you think it "dried' out some, squeeze it to make it bloody again! :wink:

watch the history channel tonight. larry the cable has a show called only in america and they going to be in the la swamps cathcing crawfish. on the previews they mention something about smelly bait in the traps. believe it starts at 8

Purina feeds makes a crawfish bait that we have been using in our traps for years and it works just as well as cut fish or melt with out the mess.

wow,

I leave for a couple days and miss this topic. yes, when we fish traps we use a compressed pellet feed that is mass produced for the traps. That is what crafish farmers and commercial trappers use. if you don't want to find or aren't doing enough to justify it, you can use fish or melts. We use melts when we run nets. melt is the pancrease. it is completely different from tripe. Tripe is the spongy stuff that looks like octupus arms and comes in vietnamese pho (soup). melt is a bloody mess.

Now that we have that straightened out, i gotta drive to the westbank for lunch, you boys made me hungry. Soup with tripe and tendon!!

word of caution on using beef melt, tripe, or any other 'butcher shop' recipes....... crawfish do not cook long enough to kill any bacteria those items may be carrying (should they spoil or be contaminated). I was at a crawfish boil where we used beef melt to catch the crawfish and everyone at the boil had it coming out both ends for a few days from a bacterial infection.
