I use regular rice and press into a small after dinner coffee cup. Turn it over and bump it.
Usually put in the middle and spread gumbo or whatever over it.
Easy to do.

Now we getting somewhere. The rice struggle is over. I too struggle with getting rice like Benny's. I figured trumps recipe had to be right so I kept using it. Ha

That blackened seafood magic seasoning is a great all purpose seasoning for any Cajun cooking.

I've done the tater salad in the gumbo but I prefer it on the side.
I also like boiled eggs in my gumbo especially duck eggs.
I located some duck eggs down here and been meaning to get over there
to get some and do this to them.
