My advice - is to go to Tour Guide Mike's website and join for $20. It is amazing the insight you can get from his site. Among some of the things, you can plug in your dates and your children's ages and the type of rides you enjoy the most. Based upon this information, he will recommend and you will get a printout what parks to do on which days and in what order to do rides/shows and get fastpasses at each park. This cat is hardcore disney and based upon years of statistical analysis and personal experience, he anticipates what "most people" will do on each day and in what order and steers you clear from the crowds and long lines. We have been during Christmas during the last two years, which is their busiest time, and I cannot tell you enough how happy and how much that $20 saved me from waiting in lines and not knowing what order to do things.
As people have said, there is a lot to be said about getting to the parks early before they open. During Christmas, we were at the park before opening and after 3 -4 hours we had done all the rides/shows we wanted to do and then hung out and ate before going back to the hotel and laying low for a while. I can assure you that if you go early, you can get more done in the first 3-4hours than if you go at 10:30 a.m. and stay until night.
