Several years ago someone posted about cooking steak in a cast iron skillet in the oven. Preheat oven and dry skillet to 500 degrees. Coat meat with light oil and black pepper. I cannot for the life of me remember the cooking time. I love doing it with bacon wrapped backstrap.

For filets, I get the cast iron skillet scalding hot with a little oil. When oil just begins to smoke I sear them for 2 minutes on each side. Place a pat of butter on each and finish in oven for 6-8 minutes at 450.
