I was in Jackson this weekend and decided to go down to Farish St. to see what all the fuss was about at the Big Apple Inn. The place has been there for a really long time and it keeps getting press from the food network, new york times, southern foodways alliance, etc. I even saw it on an episode of Hairy Bikers a month or so ago.
Let me start by saying that I love all the nasty bits of animals. I thoroughly enjoy all types of liver, sweetbreads, cheeks, etc. I have had the crispy pig ear stirfry at Snackbar in Oxford and it was delicious. So, naturally I thought that the pig ear sandwich at the Big Apple Inn would be right up my alley. Wrong!!
I should have known by the look that black woman gave me when I ordered my pig ear sandwich that I might be making a mistake. For good measure I ordered a "smoke" sandwich as well. I sat down with my pig ear sandwich and I was the only person actuall eating in there. (everyone else had called theirs in and was getting them to go.) When took my first bite I looked over and both black women who worked there were staring at me and watching me eat it. The ear itself just tasted like unflavored gelatin. It had been boiled down to a slimy gelatious mess. It literally had no flavor and the texture is something that I will never get used to or enjoy. I did however like the "smoke" sandwich. I could eat a dozen of those little things. Anybody else been there? What did you think?

I eat them fairly frequently and love them. Most of the time they have a hunk of meat attached to them where the ear joins the head. This imparts some flavor to it. I like the gelatinous sticky consistency myself. Gotta get them with the slaw and homemade hot sauce.

Yall are some wierd mofos. There are parts of most all animals made for eating and then there are parts that sit in pickle jars waiting on drunks to challenge each other after a long night at the bar
One of these days you will end up with back bottom gristle lumps.
