Duck Rolls:
Any type of duck breast sliced to 1/8" thick slices. Marinate in bourbon peppercorn, kosher salt, parsley, garlic for 4 hours. Layout on cookie sheet and give a good dusting of brown sugar over them. Put cream cheese and a Hot and Spicy jalopenoe and roll up with bacon around outside. Stab toothpick thru to hold together. Grill on 400 degrees, medium rare.

Green Bean Casserole:
Mix 2 cans of french style greenbeans and 2 cans of cream of mushroom in dish. Spread evenly and cover lightly in shredded cheese, then add a sleeve of Ritz crackers finely crushed on top of that. Bake unto bubbling

Bread:
Whatever bread or rolls you prefer to sop up the casserole

Beverage:
2/3 Crown, 1/3 water

This is just a simple recipe that is more of tradition after killing the first morning's limits for dinner that night.

On a side note, give the brown sugar on the duck a try. Something new I tried. It adds the perfect sweet kick to them

i used to marinate duck breasts (in hoover, but use your favorite), then cut a pocket in the breast, put a plank of cream cheese and a spoon full of either blackberry or raspberry jelly. use a toothpick to close the pocket, pat with brown sugar and your favorite seasoning (2 brothers rub is what we used as it was readily available to us). cook over a hot fire for 4 1/2 to 5 minutes on each side for med rare (no matter what it looks like, don't turn it early). the blackberry/raspberry compliments the duck nicely!

another good "slather" that i used was a roasted pineapple chipotle sauce...it was actually better on leftover duck diced up and cooked in eggs with cheddar cheese and a bit of the chipotle sauce to top it off and mixed in.

now, i usually just marinate in hoover sauce, season and pat with brown sugar and cook for 4min each side over a hot fire for med rare (lil less time without the cream cheese inside), then slice on a bias with hoover drizzled over the top if desired...

....i think i'll thaw my last bag of frozen birds...pop is bringing me a gallon of hoover juice tomorrow....YUM!!!

not sure where to find it anymore. i used to get it at heavenly ham, but when they were bought out they quit carrying it, at least the tupelo store did. it is from a gormet line of sauces/glazes that was sold in store, never saw them on their online site. i've seen some recipes online to make it, though, if you are inclined to do so.

1. cut duck breast in half
2. marinate in zesty Italian dressing for 24- 48 hours
3. remove duck from marinade and roll in apricot jelly till coated
4. wrap in bacon and grill to desired doneness

sweet baby rays barbeque has a rasberry chipolte that is very good, mite cud try it as well, good luck

We do the fajitas a lot and that is very good.

Smoked duck thrown into a gumbo is very tasty also.

One of my favorite and quickest ways to do duck is like this:

*soak ducks in salt water for couple days to remove most of the blood
*take each breast and score both sides (cut diagonal lines) and salt / pepper heavily
*while cutting on the breasts, have a cast iron skillet getting hot
*when you're done prepping the breasts and skillet is hot, place a spoonful of butter in the skillet with the breast immediately following right on top of the butter
*cook for 2-3 minutes on each side and when you get ready to turn the breasts over throw another dab of butter in the skillet
*duck should come out medium rare with the outside a little crisp

Very good with some red wine and veggies

Breakfast Suckatrash:

1 onion
1 tube Jimmy Dean sausage(any flavor)
1 dozen eggs

Chop onion and add to browning sausage in large skillet over a medium high heat. When sausage is nearly done, crack eggs into skillet and stir regularly until eggs are scrambled well done...serve with toast or bisquits :wink:

Feeds an army cheap and will be done in minutes...start your bisquits first :wink:

An easy pineapple sauce is 1 can crushed pineapple in a black skillet about a tablespoon of tony's and add flour to thicken to taste. Bread 1"cubed duck breasts and deep fry, bed of rice (for this I like dirty rice), and top it off with pineapple sauce.

easy duck camp appetizers .

1 pack of regular mushrooms.

remove the stems.

fry up some strips of bacon and crumble them.

mix bacon with cream cheese.

fill mushroom with bacon/cream cheese and cover with pepper jack cheese.

put on a cookie sheet and into the oven on medium heat until the cheese melts.

simple. easy. might fine.

put ice in glass fill almost to top with scotch about .25" from top then add water. Stir gently with your finger(not the one you pick your nose with) Light you a smoke and enjoy both. Usually goes best with a campfire and a few good lies.
