Canned Deer Meat

Canned Deer Meat

I have a job that takes me in a lot of different homes. I recently went into the home of a Mormon family. They stock a years supply of food in their homes at all times. Well, I was walking past some shelves in their food storage room and saw meat in a canning jars. I had to inquire about it. He told me it was deer meat. It had been cooked and canned. He told me that it kept well and was great for making stews. Anyone do this? Any suggestions on how to can some?

i was given a jar a while back by a family i used to hunt with. it was cut into small chunks and was really tender - fried it (which i generally don't do to deer - hard for me to do that to nature's leanest protein). they said that there wasn't any seasoning in it, just water and canned as you would anything else... sealed, then the jars boiled. i don't remember the boiling time, but seems like it was a standard canning boil time for meats.

My bestest buddy in junior and high school was Mormon...odd folks, but, nice. Ive got some canned rattlesnake, alligator, buffalo and ostrich in the pantry right now...Christmas present from Arizona...aint been hungry enough to try any as of yet however :wink:
