Speck recipes
What are some good speck recipes? I killed a few and don't know how to cook them!

cook it just like a beef fillet. high heat and rare/medium rare.

Thinly slice the breast meat...about an inch. Rinse meat with olive oil. Place in oven safe dish. Add 2 cans of Cream of Mushroom soup, half can of water, and 1 packet of french onion soup, stir...cover TIGHTLY with tinfoil...no steam should escape. Bake at 350 for 45 minutes to an hour. Serve over a bed of broad egg noodles with a loaf of french bread. Goes great a chilled Zinfendel

this good with snows as well? Cause it sounds damn good!

Thing about snows...they taste like liver, no matter what. Best thing for em...grind em into summer sausage and give it to the in-laws at Christmas time
A roasted speck is good too. Pluck em whole...rub with olive oil, salt, pepper liberally. Stuff with quartered apples,wrap breast with bacon. Add a coupla cups of your favorite wine, apple juice or orange juice to your covered dutch oven and bake for about an hour...uncover for 20 minutes so bacon and skin will crisp...DONT eat the apples

Yeah, this is pretty close to what we do, but we put sea salt on the skin. It tastes like roast beef.
