The processor at Mathiston makes really good smoked duck and deer sausage.It is especially good with cheese and jalapenos in it.

Last I had done was at Leland Tire Service in Leland MS. I think he told us he had to have a min of 25lbs of pure meat to run a batch. We carried him 2 48 qt ice chest full of nothing but snow and blue goose breast meat. It was some damn fine summer sausage let me tell ya! Bout the only thing we've ever found to do with sky carp!

Place in Canton did some for me last year, right there off the interstate. Real good.
Took them 40 pounds of breasted meat.
He's comin' back around...

I've not yet found one that wouldn't take it as long as you brought minimum order. Bacon burger good with waterfowl too. Summer sausage is great.

Dwights on Hwy 18 close to Raymond did mine last season. Had mallard and goose mix. It was great.
