Canton/Jackson Deer Processors

Postby ironside39090 » Thu Nov 11, 2010 1:17 pm

Who do you recommend in the Canton/Jackson area for processing deer/hog meat? Someone told me about a place in Canton or around called Deans but I haven't heard of it.

Thanks

There is a deer processing place on the west side of I-55, immediately south of the Canton exit. I have not tried it yet, but have gotten good reports about it this week. You now know what I know.

The place Hambone is referring to is Sportsman's. I think it is very good. I do most of my own processing, but they do my sausage. I also believe you get your meat back.

There is a place in Morton that is fine! They will make just about anything with your deer meat. It's called Paps Deer processing. I dont know how close Morton is to you but if it's not just an awful drive I would try them. I live in Philly and that's where I take mine. They weigh your meat right there in front of you, and put your name on the box they put it in.

Thread hijack - never taken a deer to a processor so, if you do, what is the best/most economical way to do it? I presume not to drop off the whole deer - do you quarter it/cut the meat off the bone/other? Thanks.

de-bone the the hind quarters and shoulders and it will save you some money. that's all I ever get processed. try to keep it in the biggest peices you can and don't butcher it all up when removing it from the bone on the hind quarters. the backstraps and inner loins stay with me for my own recipes :D

Another prop to the Sportsman. They've done all my deer this year and last and have been nothing but impressed. They are super convenient as well for an out of town hunter. They are open on Sundays from like 1-4, so I drop my meat off when I roll back in town.

Paps ruined 3 of my deer I took to him at one time. Took the meat back and he reluctantly refunded my money. Won't use him again. Outfitter has the best sausage hands down. Unless Vans has changed recently I wasn't too crazy about his processing.
