Although I avoid shooting them to save being harrased unmercifully, I have been to duck camps in Louisiana where they make "spoonbill stew" and you cannot tell the difference in a mallard and the spoonies the way they do it. A lot has to do with how you clean them.
So many ducks, so little time....

I ate some once in cameron parish LA. The ONLY reason I tried them was because I hadn't seen a sewage lagoon south of I-10, and they were killed in the salt marsh, so I thought these might be safe
The lady braised them in a double roaster on top of the stove for 2 hours in onions, peppers, and MadDog 20/20 (I kid you not), and they were as good as any duck I've ever eaten....
but I ain't tried another one since.

Ditto that.
I have killed shovelheads full of rice, and they tastes as good as rice-fed mallard.
I have opened the breast of many spoonies and the strong smell coming out let me know that I did not have enough garlic on hand to continue fixing them...

I'll never know...
It's a bloody mary morning...
You'd eat a chicken in a heartbeat, knowing that all its life it's been walking around in chicken poop, eating pellets out of a trough, stepping over other dead chickens in the pen and sharing lice with 10,000 other chickens in the coop....yet wonder if a shoveler is okay to eat?
Grill it.
Grill it.

I can cook them up right along with the mallards, woodies, and teal and you won't be able to tell one from the other other than size.
Looking for 2 duck calls from Dominic Serio of Greenwood (ones for Novacaine)
