Red Beans and Rice

Postby damnyankee » Mon Jul 02, 2001 2:21 pm

I saw this recipe this weekend for Rendezvous Red beans and Rice and thought I'd pass it along( Us Yankees eat stew).

Red Beans and Rice- Charles Vergos Rendezvous

3 15-16 oz. cans kidney beans, drained and rinsed
2 14 1/2 oz. cans low-salt chicken broth
1 14 1/2 oz. can diced tomatoes in juice
1 pound fully cooked smoked beef sausage, diced
2 cups sliced mushrooms
1 1/2 cups white and wild rice blend (do not use quick cooking)
1 cup chopped onion
1 cup chopped green bell pepper
1/2 cup sliced drained jalapenos from jar, chopped
1/4 cup A.1. steak sauce
2 tablespoons Worchestershire sauce
3 garlic cloves chopped

Mix all ingredients in heavy large pot. Bring to simmer over high heat.
Reduce heat to medium-low, cover and simmer until rice is tender, stirring
occasionally, about 35 minutes. Season to taste with salt and pepper.

One Day a couple a years ago My Dad and I were in Memphis and went to Rendezvous!! We went in and got a seat and our waiter came out with 2 bowls and said "Red Beans and Rice on The House" We damn near filled up on Red Beans Rice before we even got our Ribs!! Lord how I love that place. I make a trip up there almost every time I am in north MS, just to eat BBQ.
