Cooking gurus: teal breasts
I got a bunch of teal breasts. Anyone got any good recipees?
This one is pretty good. All you need is Dale's marinade, wax peppers can get at grocery store in jar, bacon, toothpicks and duck breast.
Soak breast in Dale's for 30 minutes (No longer)
Wrap breast around a wax pepper, wrap bacon around breast. Pin with toothpicks. Put on grill and cook until bacon is done. Best I ever had.

Cut them up into strips and marinate them with everything you have in your seasoning rack. Put them in the fridge overnight. Melt a stick of butter in a skillet and cut some onions up and throw them in there. Saute your onions and take them out. Put the teal in the butter along with the seasoning. Saute the teal on low fire for a few minutes and flip them. Then put your onions over the teal and put a top on the skillet on really low fire.....ready to eat in about 10 min. Now you can't say a MSU fan never did nothing for ya.

I like this one buttt.............
Subsitute Algero's Game Tame for Dales and cut a slit in the breast for the pepper and add a little cream cheese.
Instead of a tooth pick, use a bamboo skewer. This makes them so much easier to handle.
Looking for 2 duck calls from Dominic Serio of Greenwood (ones for Novacaine)

I marinated some widgeon breasts in a rasberry walnut vinegarette, (sp?) a Ken's steak house brand, for two days last week and cooked them like steaks. I like mine best medium rare, but it will stay tender up to medium. Along with it I made a pesto, parmagean ricotti and some fresh corn to go with it.. MMMMMMMM

*Keep them on the breast bone, slice five large onions and five large bell peppers.
*Place breasts in large (tukey pan w/lid) on top of bed of onion/peppers.
*Cover with another layer of onion and pepper.
*Place two cans of sliced mushrooms on top of all of that
*Throw one bag of the Litpons frnech onion soup mix and cook slow for four hours.
Eat with spoon and some good red wine, mmmmmmmm
