What is your best crawfish recipe?
I know you guys can cook some crawfish. What is your best recipe for the boil?

Per 35-40 lb sack:
(1) 4.5 lb jar Zatarain's Crawfish/Shrimp/Crab Boil (dry)
(2) Zatarain's Seafood Boil Bags
8 oz. Liquid Crap Boil
(1) box salt
(10) onions - halved
(6) lemons - halved and squeezed
(10-20) Red potatoes
(1) stick of butter
(3) lbs. sausage
(20-24) ears corn cobbettes
(1) pineapple cut up into rings (don't knock it if you haven't tried it)
Get water boiling, add all seasonings, butter, and veggies (minus corn) and stir. Once rolling boil, let boil for 25 mins. Add crawfish and sausage and stir. Once rolling boil, boil 5 minutes and turn off fire. Add corn and pineapple rings. Let soak for 20-30 minutes and spray the outside of the pot to cool down so crawfish doesn't keep cooking. Some people add ice, I just spray the outside of the pot. Sample crawfish after 20 minutes and check for tastiness. Depending on desired flavor, either take out or let soak longer.
Add quantities to ingredients above to suit your crowd. This has always worked for me and my bunch. Can also add other items: artichokes, chicken wings/legs, hot dogs, shrimp, etc.

As listed above, the key to good flavor is too cool the crawfish down and let them soak.
I met a guy who made an interesting contraption to cool the crawfish down out of copper tubing.
Basically he had several feet of copper tubing coiled up like a garden hose that is then connected to a garden hose and has the other end of the tubing hanging out over the pot. You turn your garden hose on and it acts like a radiator circulating cool water through the copper tubing so that you don't have to add ice which would dilute your seasoning mix.
Very clever, but very overkill for most folks.

Just make the short drive to Bill's Creole and Steak Depot in Flora.....best day'um crawfish I've ever eaten.....and, believe me when I say, NOBODY has eaten more crawfish than me.
