Trying to figure out how to give Dish Network the boot!

I'm not the most tech savvy fellar, so I thought I would ask what's the best way to get rid of cable/satellite TV?

I currently have Apple TV on two TVs and a Smart TV. Is there a way to get most of the channels I have now without paying Dish Network a fortune every month?

Also what can I use on an old rear projection big screen and a non-HD flat screen without a satellite box?

What do y'all have on your TVs and what do those specific things do?
