I grill mine two ways and they are both my favorites and anytime I make either of them they get smoked. the first way is the old dales, Italian dressing, and pineapple juice marinade then butterfly and fill with cream cheese and wrap in bacon. I sometimes also add jalapeno as well but usually don't. I normally do a whole or half a tenderloin this way but I also cut up hind quarter into bite size or a little bigger pieces and do the same. the second way I do it is marinade the meat in hoover sauce, a little apple cider vinegar and a little liquid smoke. I also butterfly and fill with cream cheese and sometimes banana peppers and also wrap in bacon. if you don't like this then somethings wrong!

We do similar things with deer except we don't drown it in marinade. If I want smoke, I throw some wood on the grill.

try this ..if ya gona fry some up before ya flour it up soak in a bowl of pickle juice for bout 5 min...ya can thank me later

Well I have never been good at following directions......so I soaked it all day in pickle juice..........This will be a method used on a regular basis....

boned out and cleaned up individual muscles from hind quarter:(for inner loins leave out marinade and just use season/brown sugar and reduce grill time)

marinate in hoover juice (and/or allegro hot & spicy) for 30min to all day (your choice on how much marinade flavor you want to impart), sprinkle with ground mustard, gunpowder type season (ex: sure shot sid's), pat with brown sugar and grill 4 min each side over med-hot fire for rare/med-rare (*will continue to cook in the resting stage, so don't overcook), let rest in foil for at least 5 min so juices get re-absorbed, slice relatively thin on a bias, spoon/baste with juices and serve with side of hoover/juices anju for those that feel the need to dip .
