can't take credit for this one, as robert stanton posted this on the "other" site a while back, but i've tried it and it's GREAT. particularly if you like to really spruce things up -- if not, grill it w/ butter, a dusting of some cajun spice and lemon wedges.

anyhow, robert's recipe:

4 - 7/9 ounce redfish fillets
Season redfish with salt and pepper. Pan fry or grill. Keep warm.

Zing Zang Bloody Mary Mix cream sauce:

1 cup Zing Zang Bloody Mary Mix
1/3 cup plus 1 tablespooon heavy cream
1/2 cup unsalted butter, divided
1/3 cup yellow bell pepper, diced
1/3 cup red bell pepper, diced
1/4 cup green onion, chopped
1 tablespoon garlic, minced


In saucepan add 1/4 cup butter with garlic and saute. Add Zing Zang Bloody Mary Mix, reduce slightly and then add remaining butter. In separate pan heat cream on low heat. add crawfish tailmeat, lump crabmeat or shrimp to the sauce. When sauce thickens add red and yellow bell peppers. Fold in the cream and add chopped green onions. Serve over prepared fillets.

Serve with rice pilaf and steamed vegetables and crusty bread

This is also one of Robert Stanton's recipes that I have used several times. It is easy and very, very good.

1/4 cup butter, melted
1 teaspoon cayenne pepper
1 teaspoon freshly ground black pepper
1 teaspoon lemon pepper
1 teaspoon garlic powder
1 teaspoon salt
1 1/4 cups Italian-style salad dressing

Preheat oven to 350 degrees.
take a saucepan, melt the butter on low heat; cool to room temperature. Meanwhile, in a bowl, mix the cayenne pepper, black pepper, lemon pepper, garlic powder and salt and set aside.
Dip the filets into the cooled melted butter, then coat with the seasoning mixture.
In a large skillet over high heat, sear the fish on each side for 2 minutes or until slightly charred.
Place in a big baking dish and pour the Italian dressing onto each filet. Cover baking dish and bake in oven for 30 minutes or until flaky and tender.
