Make sure you keep all the tenderloin cut as a filet. They are absolutely incredible grilled like a steak.

And don't bring it into the state unless it's deboned, skull plate cleaned, no brains, etc.

Thanks guys. Yea I remembered last minute that I needed to debone the meat and clean skull. Thank goodness I did. Kept the tenderloin and backstraps whole as I do with deer. Slow braised a front shoulder roast last night. It was excellent. Little more like beef than deer.
