Elk

After missing my only shot last year. I shot a nice bull in the Gila National Forest the first morning of my hunt this year. It was awesome. Heard at least 5 or 6 bugling that morning before calling mine up just before 7am. Shot him at 7 yards. He never knew I was there. I now have a freezer full of elk meat. Anyone have some good recipes for elk steaks?

Who were you hunting with? I killed a good bull in unit 16c in 2005. Very enjoyable place to hunt.

Cut the tenderloin into 3/4" thick slices and season with kosher salt and black pepper. Then put the steaks on a real hot griddle or black skillet. Cook for around a minute on each side for a rare steak. I also do fillets and duck breast this way. It will surprise you how good duck is this way. We tried it at camp one year thinking it was a waste of time. We cook duck breast at camp with breakfast like this all the time now.
