I have a Winkler belt knife that is a little over budget but worth every penny.
Cutco makes a good skinning knife too, I keep one in the truck. You can get it engraved too.

I have a knives of Alaska that I like very much. I also have a small Smith and Wesson knife that I like,one is expensive the other is dirt cheap both get the job done. My favorite knife I own is an old Edge Brand. You will have to go to eBay to buy one of them though they haven't been made in quite some time.

The Cutco with the double d edge is amazing and it is available with a gut hook also. I send it back to them to sharpen right before the season and it will last all year. They say free sharpening for life but by the time you pay for shipping and insurance back and forth it's about $15. I usually get 8 or more elk in Colorado (because everyone barrows mine due to its performance) and several deer before it begins to get dull.

Speaking of these knives, I woke up to the gf giving me a Cutco filet knife and serrated blade skinning knife with the guy hook after her trying her beat to slice her finger off with a Cutco bread knife last night at my grandmothers. I can't wait to use them, I was tempted to buy one last week and glad I held off.
