One comment if you're using steel pilings. Check the pH of the soil; there are some places in Mississippi that will eat up common steel in a few years and you don't want to lose this kind of investment. If that is the case where you are located, encase the piling in concrete below grade. You can use a larger diameter sonotube, stand the piling inside, plumb it and pour around it. The concrete is just there to protect the steel from corrosion.

Good point. Set ups I have seen use steel with a plate on the foot that bolt to slab. No steel in the ground. They do need a weep hole to allow moisture out and to keep them from being a float in times of high water.

The only way I would go wood would be if it were a budget thing. The pipe and all the welding and what not required is a pretty serious investment.
