I have done quite a bit of reasearch and folks are using Modulating Thermostats from gas ovens but these are running off of Natural gas. I am trying see if this type of unit could be used for a propane smoker or what other options are out there.
I have the Masterbuilt 30" vertical smoker and she needs a babysitter to watch the temps. I am looking for a way to set a temp and keep a constant temp. I also read about the Needle valves. Anyone use these for a smoker?
Any thoughts?
The main parts used in their conversions are below along with other plumbing and such.

This is the link that I've read the most. This is a great idea.
