Grilled Redfish recipe

I've got some reds on the halfshell and I'm looking for some new recipe's...Who's got the best? Lets hear it!

lemon butter NuNu's seasoning and grill scales down until the meat comes off the skin

Not a grilling recipe but one if my favs. I season my fillets with Tony's on both sides and place on a baking pan the melt butter in the microwave and cover the fish. Bake in the oven for 15 20 min or until flacky. While that's cooking I make a cream sauce. Melt better in skillet prolly table spoon then sauté 1 chopped onion and mushrooms if u like them. Then I use one can of tiny shrimp and crab meat sauté all that until cooked. Then I add half and half and use parmesan cheese to thicken up. Put over the fish and enjoy. Sometimes I use crawfish tails as well. Pretty simple sauce I created and everyone enjoys it.

For grilling on the half shell, coat the filet with Dukes mayonnaise, parmesan cheese, capers and top with some lemon juice. Grill scale side down. It's delicious!

This is the recipe I use.

Captain John L's Redfish on the Halfshell

1/2 stick butter
1 tablespoon garlic powder
1 tablespoon tony's
1 cup Italian salad dressing
1/2 cup 1000 Island salad dressing
1/2 8 oz bottle of Tiger Sauce
2 tablespoons Lemon Juice

Sprinkle halfshells with Tobasco Sauce (optional) to taste and let sit until fire is hot. Place halfshells on grill and cover with Italian bread crumbs, then soak with your heated mixture of above sauce.

Cook only until a fork inserted in the thick part of the meat will turn and flake the meat. Do not overcook or turn.

to taste the fish, a little salt, little pepper, little lemon and enough wood chips for hint of smoke. serve with bolied potatos smothered with butter/lemon and season salts

butter, white wine worcestershire, minced garlic,

or butter, soy sauce and little italian dressing.
