I would use the composite decking with just enough gap to drain. I know it's expensive but it shouldn't be that bad for the area that you are covering. You can get it in dark color and won't even need to coat or paint.

Foam came in this week and I went and got all the lumber.

Got to foam the pontoons yesterday. This stuff is cool. Surprisingly, there was already block foam in the toons. So I only used 1/2 of what I bought to fill in all the voids.

pop riveted the aluminum flashing on top of the holes, with silicone under and around it to prevent any water getting in the top. I got about 5 rows of deck boards down before it got dark.
It's coming along.

Looking good! You may already know about this stuff or not even need it, but PL Premium was some pretty awesome adhesive and sealant for my little boat project.

Got to put a few boards on today. Other than that, not much progress.

Project is coming along nicely!!

Cracks between the boards will get bigger as the boards dry.

Ran out of 2x4s, and deciding just how I want to leave the shooting openings (four 3ft spots, or two 6ft). But you get the basic idea.

Thanks for sharing the pictures and progress with us. Hope it makes for a great story telling place come duck season, looks like it'll do just fine.
I am interested in purchasing duck calls that were made by Mike McLemore. I am a family member and they have a sentimental value.
