You'll enjoy the train ride for sure, as far as Alaskan communities go Fairbanks isn't the top of the list but still nice place, the train is going to carry you right by Denali Nat Park, but from sounds of it you won't get to spend any time there. I lived there 11 years truly incredible. As far as "must sees" that really depends on the person. Most of the normal ones have been mentioned, I'm assuming you will have wheels but get a room at Denali and do full day tour of The Park, make drive up a two day trip, from anchorage to Palmer...

Verizon has great customer service but their LTE signal sucks, ATT seems to be better side by side for 4g in most locations.
